With summer around the corner, I am always in search of beautifully presented and delicious healthy salads.
I often make a simple Lentil Salad with great flavor that works well as a side dish. During a trip to Spain last summer, I sampled a Zucchini and Parmesan Salad which I recreated at home. Here is a recipe you can follow from bonappetit.com. Instead of basil, I use mint.
I also love this Kale and Pomegranate Salad which I snatched from the Bonberi site. It’s both hearty and makes for a great starter.
I recently came upon a grilled Chopped Chicken Salad recipe in Gwyneth Paltrow’s new cookbook, It’s All Easy, that has become a weekly family favorite. It’s colorful and is a meal on its own.
To finish off a summer meal in a way that doesn’t expand your waistline, try this Orange, Strawberry and Mint Salad. It is quite refreshing and quick to assemble.
