Frittatas are hot in more ways than one. They’re my summer entertaining staple as they require a few fresh ingredients and very little prep time when I have last minute guests. Everyone seems to love them (or so they say) especially my husband! I typically use egg whites to offer a healthy option on a lunch buffet. Frittatas can also make for a meal in itself when paired with some of my favorite fiber filled GG crackers.
Below are my three favorites. Each frittata is inspired by a different region. The tomato mozzarella has an Italian flavor, almost like a pizza if you will (or won’t). The spinach and feta frittata has a Greek influence and the squash and onion bring me back to my Middle Eastern roots.

Squash and Onion Frittata
Ingredients:
3 Yellow squash finely chopped
1 large onion minced
12 egg whites
Grated parmesan cheese
Salt and pepper to taste
Prep:
Sauté onions and squash together in olive oil for 5-7 minutes on the stove top until onions begin to brown and let cool
Mix in egg whites
Spray frittata pan with Pam spray and heat
Add egg/vegetable mixture and salt and pepper to taste
Cook until set and then transfer to 400 degree oven to finish
Generously sprinkle parmesan cheese on top and serve additional on the side
Can be served warm or room temperature
Tomato and Mozzarella Frittata
Ingredients:
1 tomato sliced
Thinly sliced mozzarella
Basil leaves
12 egg whites
Sprinkled parmesan
Salt and pepper to taste
Prepared pesto
Prep:
Spray frittata pan with Pam spray and heat
Cover the pan with mozzarella slices in a circle pattern
Top each piece with a slice of tomato and a basil leaf
Pour egg white mixture on top
Add salt and pepper to taste
Cook until set and then transfer to 400 degree oven to finish
Serve immediately with pesto on the side
Spinach and Feta Cheese Frittata
Ingredients:
1/2 cup of crumbled feta cheese or more so if you desire
1 1/2 cups baby spinach
12 egg whites
Salt and pepper to taste
Optional: Olive tapenade
Prep:
Spray frittata pan with Pam spray and heat
Combine feta cheese, baby spinach and egg whites.
Sprinkle with salt and pepper
Pour mixture into frittata pan
Cook until set and then transfer to 400 degree oven to finish
